These bone-in roasted chicken thighs cook perfectly in just 40 minutes! The skin is super crispy, while the inside is tender, moist, and packed with flavor. A quick and easy meal that everyone will enjoy.
I love serving it with 4 cheese mac and cheese and vegetables for a comforting dinner meal but feel free to serve it with a side salad for a lighter option.
I love cooking chicken thighs for dinner because they’re affordable, and when cooked right, they are delicious! Chicken thighs are perfect for busy weeknight meals and they make the best leftovers. INGREDIENT NOTES
- Chicken – Bone-in skin-on chicken thighs is what I used but feel free to use boneless chicken thighs. Keep in mind that cooking times will vary, if using boneless chicken.
- Oil – Olive oil is recommended for this recipe.
- Spices – I used a combination of paprika, garlic powder, onion powder, and Italian seasoning. This is my go-to spice blend for chicken thighs!
- Salt and Pepper – I recommend seasoning the chicken lightly with salt and pepper otherwise, it may turn out too salty and become inedible. You can always add more salt later.
TOP TIPS
- Pat dry the chicken with a paper towel to get rid of any excess moisture before seasoning it.
- Take the chicken out of the fridge 20 minutes before cooking so it cooks evenly. Cold chicken straight out of the fridge will cook unevenly.
- Season the chicken thighs lightly with salt and pepper after coating it with the oil and spice blend.
- Make sure to season the chicken under the skin as well!
- Cook the chicken on a baking sheet with a wire rack! Placing the chicken on a wire rack allows the hot air to circulate evenly around the chicken, ensuring it cooks evenly on all sides. This helps to avoid soggy chicken, resulting in a crispy and evenly cooked chicken.
- Cook the chicken uncovered so the skin gets nice and crispy.
- Feel free to serve with hot sauce, BBQ sauce, honey mustard, or the sauce of your choice!
HOW LONG DO I COOK THE CHICKEN FOR?
Keep in mind that every oven is different and may run hotter than others. With that being said, I cooked the chicken for 40 minutes at 400 degrees F. I highly recommend using a meat thermometer and cooking the chicken until it reaches an internal temperature of 165 degrees F.
HOW TO STORE LEFTOVERS
Allow the leftover chicken to cool completely, then transfer to an air-tight container and refrigerate for up to 3 days. Simply reheat in the air fryer, microwave, or oven until heated through.

Ingredients
- 2 lbs chicken thighs, about 5 bone-chicken thighs
- ¼ cup olive oil
- 1 tablespoon garlic powder
- 2 teaspoons onion powder
- 2 teaspoons paprika
- 1 teaspoon Italian seasoning
- salt and pepper to taste
Instructions
- Preheat your oven to 400 degrees F and line a baking sheet with parchment paper and a wire rack.

- In a small bowl, combine the olive oil, paprika, garlic powder, onion powder, and Italian seasoning.
- Coat the chicken with the oil and spice mixture all over.
- Place the chicken thighs on the wire rack and season lightly with salt and pepper. Make sure to season underneath the skin as well.
- Bake uncovered for 40 minutes or until the chicken reaches an internal temperature of 165 degrees F.
- Allow the chicken to rest for 4-5 minutes and enjoy!
