Preheat your oven to 350 degrees F and line a baking sheet with parchment paper. Mix 1/2 cup of butter, granulated sugar, and brown sugar until well combined.
Add the egg, coconut extract, coconut flakes, and vanilla extract. Mix for 1 minute. Add the flour, salt, and baking soda and mix until the mixture turns into cookie dough.
Using a cookie scoop, drop the cookie dough onto the baking sheet and bake the cookies for 11-12 minutes. Allow them to cool completely before frosting.
