Mexican Corn Salad

This Mexican Corn Salad is delicious and filled with delicious flavors. Everything you could want in a quick and easy 15-minute meal.

Enjoy this with carne asada tacos and tortilla chips for a comforting complete meal.


– lettuce – corn – tomatoes – avocado – sour cream – mayo – lime juice – olive oil – paprika – cumin

In a large bowl, combine the corn kernels with the sour cream, mayo, and half the lime juice. Add the paprika and cumin. Mix until everything is well incorporated.

In a sperate bowl combine the remaining lime juice with the olive oil and ¼ Tsp cumin. Add salt and pepper to taste.

Drizzle the lettuce with the vinaigrette and toss to combine. Assemble the salad. Make a bed with the lettuce.

Top with the corn, tomatoes and avocado and sprinkle with cotija cheese.

Tips and Recipe Variations

- You may incorporate as many veggies as you’d like such as spinach, red onions, and etc. - If you want to make this spicy, add some pickled jalapenos.
