Meatloaf

Meatloaf is an easy dinner recipe that everyone loves. Ground beef mixed with crushed ritz crackers, caramelized onions, and ketchup.

Ingredients

  • 2 lb ground beef 85/15 ground chuck
  • 2 tsp salt
  • 1 tsp pepper
  • 2 eggs
  • 1/2 onion finely diced
  • 4 garlic cloves finely minced
  • 3/4 cup Ritz crackers crushed
  • 1/4 cup whole milk
  • 1 tsp Italian seasoning
  • 1/2 tsp Worcestershire sauce
  • 1/4 cup ketchup
  • 1 tbsp oil

Instructions

  • Preheat oven to 375 degrees F and line a 9x5 loaf pan with parchment paper. Let the ground beef sit at room temperature for 20 minutes.
  • In a small skillet heat oil over medium-high heat and cook the onions for 3-4 minutes or until translucent. Stir in the garlic and cook for 20 seconds. 
  • Let the onion and garlic mixture cool for 10 minutes before adding it to the beef mixture.
  • In a large bowl, mix the ground beef, onion and garlic mixture, salt, pepper, eggs, crushed ritz crackers, whole milk, Italian seasoning, and Worcestershire sauce. Don't overmix.
  • Press the beef mixture into the lined loaf pan. Brush with ketchup evenly, leaving 2 tbsp of ketchup behind. Bake for 40 minutes uncovered.
  • Once the 40 minutes are up, brush the meatloaf with the remaining ketchup and bake for an additional 15 minutes. Let the meatloaf rest for 10 minutes before slicing and enjoy!

Notes

  • Line a 9x5" loaf pan with parchment paper for easier cleanup and easier removal of meatloaf.
  • Don't have time to caramelize the onions and garlic? Add raw onions and raw garlic to the beef mixture instead.
  • If you don't have Italian seasoning, feel free to season the meatloaf with your favorite spices or just salt and pepper. 
  • Substitute beef for ground chicken, pork, or turkey. A lot of grocery stores sell a "meatloaf mix" that consists of pork, beef, and veal. If you can get your hands on a meatloaf mix at your local supermarket, use that.
  • For best results, I highly recommend using 1 tsp of salt for every pound of meat.
  • To check for seasoning, cook 1 tbsp of the meatloaf mixture on the stovetop. This should take about 1-2 minutes.
  • Don't over mix!
