Veggie Cream Cheese Roll-Ups

These veggie cream cheese roll-ups contain cream cheese, sour cream, broccoli, and carrots. A quick and easy recipe that comes together in minutes!

Ingredients

  • 2 flour tortillas burrito style tortillas
  • 2 carrots peeled and grated
  • 1 head broccoli finely chopped
  • 1 tsp garlic powder
  • 1 tbsp chives fresh
  • 8 ounces cream cheese softened
  • 1/2 cup sour cream
  • salt and pepper to taste

Instructions

  • Discard the broccoli stem and roughly chop the broccoli florets. Scrub, peel, and grate the carrots using a box grater and set them aside. 
  • In a large bowl, mix the softened cream cheese, sour cream, garlic powder, and chives. Mix well and season with salt and pepper to taste. 
  • Spread a generous amount of the cream cheese mixture on a large tortilla. Sprinkle the tortilla with the veggie mixture and then roll tightly. 
  • Cut the tortillas into 1-inch slices and enjoy! 

Notes

  • If you want to add extra flavor, feel free to add 1 tbsp of Ranch dressing mix to the cream cheese mixture.
  • Feel free to include cucumbers, bell peppers, and onions!
  • If you're not a fan of sour cream, use mayo instead.
  • Make sure to add a very generous amount of cream cheese mixture to each tortilla! It adds so much flavor.
  • Serve the roll-ups with any leftover cream cheese mixture.
