Fruity Pebbles Cookies

These fruity pebbles cookies are soft, chewy, and bake in 12 minutes. Made from scratch, no chilling the dough, and cookies keep their shape!

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cornstarch
  • 1/2 tsp salt
  • 1 cup unsalted butter (2 sticks) softened
  • 1 egg room temperature
  • 1 1/4 cups sugar
  • 1/4 cup fruity pebbles
  • 1 tbsp vanilla extract
  • fruity pebbles for rolling, about 1 cup

Instructions

  • Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
  • Start by creaming the softened butter and sugar for about 2-3 minutes. 
  • Add the egg and vanilla extract and mix until well combined. 
  • Add the flour, baking soda, baking powder, cornstarch, and salt. Mix until it forms a ball of dough. Add the fruity pebbles and mix until well combined. 
  • Place about 1 cup of fruity pebbles in a dish. Divide the cookie dough into balls, then roll in fruity pebbles to coat evenly. 
  • Place the cookie dough balls on the baking sheet. Bake for 12 minutes and enjoy.

Notes

  • Use a cookie scoop to measure the dough for even baking.
  • Don't overbake the cookies or overmix the dough.
  • Eat the cookies while warm!
  • Use softened butter and room-temperature eggs.
