Air Fryer Mexican Corn

- 4 corn on the cobb
- 3/4 cups mayo
- 1/2 lime
- 1 chipotle pepper in adobo sauce finely minced
- cotija cheese
- tajin seasoning
- cilantro, for garnishing optional
Preheat your air fryer to 400 degrees F. and spray the air fryer basket with cooking spray.
While the air fryer preheats, prepare the chipotle mayo sauce. In a small bowl, combine the mayo, lime juice, and minced chipotle pepper.
Place the corn in the air fryer basket and cook for 10 minutes, flipping halfway.
Remove the corn from the air fryer and brush it with the chipotle mayo. Sprinkle some cotija cheese, cilantro, and tajin on top, and enjoy warm!
- If you want the corn to be really charred, cook for a few extra minutes.
- Want a buttery taste? Brush the corn with a little bit of butter before brushing it with the chipotle mayo sauce.
- If you don't have tajine seasoning on hand, use chipotle powder or chili powder instead.
- For best results, use fresh sweet corn.
