Pastelitos de Guayaba y Queso (Guava & Cheese Pastries)
These Cuban pastries are filled with guava and cheese. They're great with a cup of coffee or as a dessert after a meal.

- 1 package puff pastry
- 8 ounces guava paste
- 8 ounces cream cheese
Simple Syrup
- 1/4 cup sugar
- 1/4 cup water
Preheat oven to 350 degrees F
Thaw the puff pastry according to packaging instructions
Add the water and sugar to a sauce pan and cook over medium heat until the sugar dissolves
Remove the water and sugar mixture from the heat and let it cool completely
Unfold each sheet of puff pastry onto a lightly floured surface and roll it out so its about an inch bigger
Cut each pastry sheet into 4 squares, place a slice of guava paste and cream cheese in the center of each square
Brush the edges with the egg wash and seal it in a triangle shape
Place the triangles on a lined baking sheet, brush the tops with the egg wash and make a slit in the center so the steam can release
Bake the triangles for 25 minutes
Brush them with the simple syrup and enjoy
