Confetti Cake

Confetti Cake is my little brother's favorite cake. I make it for him every year on February 8th. I prefer chocolate cake over vanilla but this one is so delicious that it actually makes me reconsider every time. I think most kids would enjoy this cake. It's just a very fun looking cake. It screams kiddy in a good way. Imagine walking into an 8-year-old kids birthday party with this cake in one hand and a box of pizza in the other. You may get tackled.

Ingredients

Cake

  • 12 ounces unsalted butter
  • 2 cups sugar
  • 4 egg whites
  • 1/2 tbsp vanilla extract
  • 3 cups flour
  • 1/2 tsp baking soda
  • 2 1/2 tsp baking powder
  • 1 1/2 cups milk
  • 3/4 cup rainbow sprinkles
  • pinch of salt

Vanilla Buttercream

  • 4 ounces unsalted butter
  • 5 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup milk plus 2 tbsp

Instructions

  • Preheat oven to 350 degrees
  • In a medium sized bowl, whisk the all purpose flour, baking soda, baking powder, salt, and set aside.
  • In a large bowl beat the butter and sugar until nice and fluffy
  • Add the vanilla extract and egg whites to the sugar mixture and mix until well incorporated
  • Add the flour mixture to the butter and sugar mixture alternating with the milk
  • Fold in the sprinkles
  • Pour the batter into three greased 8 inch baking pans and bake for 25 minutes or until done
  • To make the frosting, mix the unsalted butter for about 2 minutes
  • Add the powdered sugar, milk, and vanilla extract, mix for about 3 minutes on high speed.
