- 8 eggs hardboiled
- 1/4 cup mayo
- 1/2 tbsp dijon mustard
- 2 tbsp shallot
- 1 scallion finely chopped
- 1/2 tsp fresh dill
- 1/4 tsp paprika optional
- salt and pepper to taste
In a large bowl, mix the mayo, dijon mustard, shallots, fresh dill, scallions, and season with salt and pepper.
Fold in the chopped boiled eggs into the mayo mixture until well combined.
Add some paprika if desired and enjoy!
