Instant Pot Shrimp Alfredo Pasta

- 1 lb penne pasta
- 1 lb jumbo shrimp frozen
- 1 cup heavy cream
- 3 cups chicken stock
- 2 garlic cloves finely minced
- 8 ounces cream cheese softened
- 1/2 cup parmesan cheese
- 2 tbsp olive oil
- 1/4 tsp parsley, optional
- salt and pepper to taste
Press the saute function on the instant pot. Add the olive oil and fresh minced garlic. Cook that for 20-30 seconds.
Press the cancel function. Add the heavy cream, chicken stock, penne pasta, and frozen shrimp. Season with salt and pepper.
Cover the pot with the lid securely and then press the pressure cook function. Set it for 3 minutes. Once the 3 minutes are up, press the cancel function. Do a quick release, open the lid and remove the shrimp from the instant pot and set aside.
Press the saute function and add the cream cheese and parmesan cheese and stir it in until smooth. Let the sauce thicken for 1-2 minutes.
Stir the shrimp back into the instant pot and cook for 10 additional seconds. Serve warm and enjoy!
- Do a quick pressure release and remove the shrimp from the instant pot as soon as you open the lid and set it aside. Otherwise, the shrimp may overcook.
