Penne alla Vodka with Shrimp

This penne alla vodka with shrimp is tossed in a tomato cream sauce, then topped with fresh parmesan cheese and red crushed pepper.

Ingredients

  • 1 lb penne pasta
  • 1 lb shrimp peeled and deveined
  • 1 yellow onion finely diced
  • 3 garlic cloves finely minced
  • 1 tsp red crushed pepper optional
  • 28 ounces tomato puree canned
  • 1 cup vodka
  • 1 cup heavy cream
  • 1/2 tbsp sugar
  • salt and pepper to taste
  • olive oil as needed

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 1 minute on each side. Remove the shrimp from the skillet and set it aside.
  • Add more oil to the skillet and add the onions. Cook for 3-4 minutes.
  • Stir in the garlic and red crushed pepper, cook for 20 seconds. 
  • Add the vodka sauce and cook for 4 minutes or until the vodka reduces by half.
  • Add the tomato puree, sugar, salt, and pepper, and reduce the heat to medium-low. Cover and cook for 15 minutes while the pasta cooks.
  • Cook the pasta according to packaging instructions.
  • Add the heavy cream to the tomato sauce and cook for 2 minutes. Check for seasoning and add more salt if needed.
  • Add the shrimp and penne to the sauce and mix well.
  • Serve immediately and enjoy!

Notes

If you like a chunkier sauce use 28 ounces of crushed tomatoes instead of tomato puree.
