Heat olive oil in a large skillet over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 1 minute on each side. Remove the shrimp from the skillet and set it aside.
Add more oil to the skillet and add the onions. Cook for 3-4 minutes.
Stir in the garlic and red crushed pepper, cook for 20 seconds.
Add the vodka sauce and cook for 4 minutes or until the vodka reduces by half.
Add the tomato puree, sugar, salt, and pepper, and reduce the heat to medium-low. Cover and cook for 15 minutes while the pasta cooks.
Cook the pasta according to packaging instructions.
Add the heavy cream to the tomato sauce and cook for 2 minutes. Check for seasoning and add more salt if needed.
Add the shrimp and penne to the sauce and mix well.
Serve immediately and enjoy!
Notes
If you like a chunkier sauce use 28 ounces of crushed tomatoes instead of tomato puree.
