Carne Guisada
Carne guisada is a classic Puerto Rican dish made with chunks of beef, potatoes, and spices. A hearty and delicious dinner that is packed with flavor and super easy to make.

- 2 lbs beef
- 2 potatoes peeled and chopped
- 1/4 cup sofrito
- 8 ounces tomato sauce
- 1 tsp white vinegar
- 1/2 tbsp adobo
- 1 tsp sazon
- 1 tbsp olive oil
- 1 bay leaf
- 1 tbsp tomato paste
- 1/4 cup olives
- 5 cups water
- salt and pepper to taste
- vegetable oil
Begin by seasoning the beef with adobo, sazon, and olive oil. Let the beef sit at room temperature for 15 minutes.
In a large pot, heat some vegetable oil over medium-high heat. Add the beef to the pot and cook for 3-4 minutes on each side. Remove the beef from the pot and set it aside.
Add the sofrito, tomato sauce, vinegar, and tomato paste, to the pot. Make sure to scrape the bottom of the pot. Let it simmer for 1 minute. Add the beef back to the pot along with 5 cups of water. Let it come to a boil, cover, and reduce the heat to medium-low.
Cook for 1 hour and 30 minutes. Add the potatoes and olives, cover, and cook for 30 minutes. Once the 30 minutes are up, cook for 10 minutes or until the sauce thickens and the potatoes and beef are fork-tender. Check for seasoning and enjoy.
- Omit the potatoes to make this a low-carb meal.
- To make it spicy, add some red crushed pepper, cayenne pepper, or diced green chilies.
- Not a fan of regular potatoes? Add some sweet potatoes or cassava instead.
- Don't remove all of the fat from the beef, it adds flavor. I highly recommend using meet with lots of marbling.
