Chorizo Tacos

These flavorful chorizo tacos are the perfect combination of spicy and smoky. Top it off with crispy potato sticks and goat cheese for the best tacos ever!

Ingredients

Toppings

  • 1/4 cup goat cheese
  • 1/2 cup potato sticks
  • fresh cilantro
  • 1 onion finely diced
  • lime, juiced

Instructions

  • Remove the chorizo from its casing and set it aside. 
  • Heat a large skillet over medium-high heat. Add the chorizo to the skillet and break it up using a wooden spoon or meat masher. 
  • Cook the chorizo for 8 minutes while stirring frequently. Add the fresh garlic and chipotle peppers and cook for an additional 2 minutes. Check for seasoning and add salt if needed. 
  • Warm up some tortillas on the stovetop and top them off with a generous amount of chorizo. Top each taco off with onions, cilantro, potato sticks, and goat cheese. 

Notes

  • Warm up those tortillas! It makes such a difference. You can use a microwave or stovetop!
  • Want it extra spicy? Add more chipotle peppers.
  • To make these more authentic, omit the goat cheese and potato sticks. Simply serve them with fresh cilantro and raw onions.
  • Place any leftover chorizo in an air-tight container and refrigerate for up to 3 days. To reheat, simply place the chorizo in a skillet and cook over medium-high heat for a couple of minutes.
  • Serve with sour cream and hot sauce for extra flavor.
