Veggie Cream Cheese Roll-Ups

- 2 flour tortillas burrito style tortillas
- 2 carrots peeled and grated
- 1 head broccoli finely chopped
- 1 tsp garlic powder
- 1 tbsp chives fresh
- 8 ounces cream cheese softened
- 1/2 cup sour cream
- salt and pepper to taste
Discard the broccoli stem and roughly chop the broccoli florets. Scrub, peel, and grate the carrots using a box grater and set them aside.
In a large bowl, mix the softened cream cheese, sour cream, garlic powder, and chives. Mix well and season with salt and pepper to taste.
Spread a generous amount of the cream cheese mixture on a large tortilla. Sprinkle the tortilla with the veggie mixture and then roll tightly.
Cut the tortillas into 1-inch slices and enjoy!
- If you want to add extra flavor, feel free to add 1 tbsp of Ranch dressing mix to the cream cheese mixture.
- Feel free to include cucumbers, bell peppers, and onions!
- If you're not a fan of sour cream, use mayo instead.
- Make sure to add a very generous amount of cream cheese mixture to each tortilla! It adds so much flavor.
- Serve the roll-ups with any leftover cream cheese mixture.
