Crockpot Spinach Artichoke Dip

This crockpot spinach artichoke dip is fresh spinach, lots of cheese, and artichokes cooked in the slow cooker. It's rich, creamy, garlicky, and super easy to put together!

Ingredients

  • 14 ounces spinach roughly chopped
  • 14 ounces canned artichokes chopped
  • 8 ounces cream cheese softened
  • 1 cup sour cream
  • 1 cup mozzarella cheese
  • 1/4 cup parmesan cheese grated
  • 2 garlic cloves finely minced
  • 1 tsp garlic powder
  • salt and pepper to taste

Instructions

  • Add all of the ingredients to the crockpot and cover. Cook on high for 1 hour or on low for 2-3 hours. 
  • Uncover and stir until well combined, check for seasoning and enjoy! 

Notes

  • Don't have spinach on hand? Use fresh kale instead for a different flavor.
  • Make sure to give the spinach a rough chop before adding it to the crockpot.
  • If you find that the dip is too white and cheesy after mixing it, stir in more spinach!
  • Once it's done cooking, you can turn on the "warm" function and it will stay warm for hours.
