Camarones Al Ajillo
These camarones al ajillo are shrimp cooked in garlic-infused oil. A quick and delicious appetizer or dinner option perfect for a busy weeknight meal.
- 1 lb shrimp peeled and deveined
- 1/2 cup olive oil
- 1/4 cup white wine optional
- 1/2 lemon
- 6 garlic cloves sliced or minced
- 1 tsp red crushed pepper optional
- salt and pepper to taste
- fresh cilantro
Peel and devein the shrimp and dry with a paper towel. Season with salt and pepper.
Add the oil, garlic, and red crushed pepper to a large skillet and cook over medium heat. Cook the garlic for 2 minutes or until it turns golden.
Add the shrimp and cook for 30 seconds on each side. Stir in the white wine and lemon juice. Cook for 1-2 minutes or until the wine reduces by half. Season with salt and pepper, serve with fresh cilantro or parsley, and enjoy!
