Red Velvet Cake Jars

These little desserts are perfect for Valentine's Day or as little gifts to give your loved ones. These mini cakes cook up quickly and with a little stacking are so pretty once you frost them.

I used my red velvet cake recipe because I love it and think it’s the absolute best. Be sure to save one for yourself.

INGREDIENTS

– all purpose flour – sugar – salt – baking soda – apple cider vinegar – vegetable oil – buttermilk – vanilla extract – red food coloring – unsweetened cocoa powder

Preheat oven to 350 degrees. In a bowl, sift the all-purpose flour, cocoa powder, and salt, set aside.

In a separate bowl, mix the 2 eggs, vegetable oil, buttermilk, vanilla extract, red food coloring, and sugar. Add the dry ingredients to the wet and mix.

In a bowl mix the baking soda and apple cider vinegar. Once it foams up, add it to the cake batter. Pour the batter into a 9 inch greased baking dish and bake for 27-30 minutes.

To make the frosting, mix the cream cheese and butter for about 2 minutes. Add the powdered sugar and vanilla extract, mix for about 3 minutes on high speed then place in a piping bag.

Tips and Recipe Variations

- I used very little cocoa powder for this recipe only because I wanted the red velvet cake a very vibrant red.
