- 2 cups all-purpose flour
- 2 cups cheddar cheese
- 2 tbsp sugar
- 1/2 cup sour cream
- 1 cup whole milk
- 1/4 cup vegetable oil
- 3 tbsp chives
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 egg room temperature
- 1/2 cup unsalted butter melted and slightly cooled
- 1 tsp Italian seasoning
- 2 garlic cloves finely minced
Preheat oven to 350 degrees F. and line a muffin tin with muffin liners.
In a large bowl, mix the melted butter, sour cream, egg, oil, garlic, sugar, and whole milk.
Stir in the flour, baking soda, baking powder, salt, and Italian seasoning. The batter will be lumpy but don't over-mix.
Fold in 1 1/2 cups cheddar cheese and 2 tbsp fresh chives. Divide the batter between muffin cups. Top each muffin cup with the remaining cheddar cheese and chives.
Bake for 18 minutes. Let the muffins cool for 15 minutes before enjoying.
