Peanut Butter Balls

These peanut butter balls are super easy to make and require minimal ingredients. They're creamy on the inside with a hard chocolate outer shell making these incredibly delicious!

Equipment

  • baking sheet
  • Cookie Scoop
  • Electric mixer

Ingredients

  • 1 cup creamy peanut butter
  • 8 tbsp unsalted butter room temperature
  • 2 cups powdered sugar
  • 2 cups dark chocolate melting wafers melted *Check Notes*
  • ¼ cup crushed peanuts optional

Instructions

  • In a large bowl, mix the softened unsalted butter and peanut butter until smooth. This should take about 1-2 minutes.
  • Add the powdered sugar and mix until well combined. It should look like cookie dough. Refrigerate for 1 hour.
  • Once the hour is up, remove the mixture from the fridge and roll it into 1-inch balls. Freeze the balls for 1-2 hours.
  • Finally, dip each peanut butter ball in the melted chocolate and garnish with crushed peanuts. I like using a fork to dip the balls in the chocolate but feel free to use a toothpick or spoon instead.

Notes

I really love Ghirardelli dark chocolate melting wafers for this recipe. It's perfectly sweet and melts beautifully without having to add any oil!
