  • 8 eggs hardboiled
  • 1/4 cup mayo
  • 1/2 tbsp dijon mustard
  • 2 tbsp shallot
  • 1 scallion finely chopped
  • 1/2 tsp fresh dill
  • 1/4 tsp paprika optional
  • salt and pepper to taste


  • In a large bowl, mix the mayo, dijon mustard, shallots, fresh dill, scallions, and season with salt and pepper.
  • Fold in the chopped boiled eggs into the mayo mixture until well combined.
  • Add some paprika if desired and enjoy!
