Spicy Peanut Noodles

Spicy Peanut Noodles are saucy, delicious, and so easy to make! Ready in just 15 minutes, they’re full of flavor for a satisfying vegan dish everyone will love.

Ingredients

  • 8 ounces spaghetti or ramen noodles
  • 2 teaspoons sesame oil
  • 1 tablespoon garlic about 2 garlic cloves finely minced
  • ¼ cup low sodium soy sauce
  • 6 tablespoons creamy peanut butter
  • 1-2 tablespoons sriracha sauce
  • 1 cup water
  • fresh lime juice (optional)
  • fresh cilantro (optional)
  • crushed peanuts (optional)

Instructions

  • Boil a pot of water and cook pasta as directed for al dente.  While pasta is cooking, prepare the sauce by heating sesame oil in a saucepan. 
  • Once heated, add garlic and saute for about 15 seconds or until fragrant. 
  • Add soy sauce, peanut butter, sriracha, and water to the saucepan and whisk to combine on medium heat until hot.
  • Drain pasta once cooked and return to pot.  Pour sauce over pasta and toss to coat.  Serve with a squeeze of lime and garnish with cilantro and crushed peanuts.  

Notes

  • Use your favorite long pasta.  
  • Noodles have medium spice.  For less spice, add only 1 tablespoon of Sriracha to the sauce.
  • These are saucy noodles.  If you prefer less sauce, just add the amount of sauce you prefer.  If made as directed, these noodles will not dry out as they sit or when refrigerated.  They are good hot or cold.
