Viral Caramelized Onion Pasta
This viral caramelized onion pasta became super popular on Tiktok and for good reason! It's made with oven-roasted onions, an entire head of garlic, heavy cream, Parmesan cheese, and spicy chili crunch oil.

- 4 medium onions thinly sliced
- ¾ lb spaghetti or pasta of choice
- 1 whole head of garlic top sliced off
- 1 teaspoon granulated garlic
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 3 tablespoons olive oil
- 1 cup heavy cream
- 2-3 tablespoons chili garlic crunch oil or to taste
- 1/2 cup Parmesan cheese
- Fresh parsley chopped
- Salt and freshly ground black pepper to taste
- Reserved pasta water as needed ( I used about 1/2 cup)
Preheat your oven to 400°F.
Add the thinly sliced onions and whole head of garlic to a large oven-safe skillet. Sprinkle with the granulated garlic, onion powder, paprika, salt, and pepper. Drizzle with olive oil and toss the onions until evenly coated. Cover tightly with aluminum foil and bake for 1 hour, or until the onions are soft and tender.
While the onions finish roasting, bring a large pot of generously salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve at least 1 cup of pasta water before draining.
Carefully remove the skillet from the oven and transfer it to the stovetop over medium-low heat. Squeeze the roasted garlic cloves out of their skins and mash them into the onions. Add the heavy cream, freshly grated Parmesan cheese, and chili garlic crunch oil. Stir until everything is well combined and bring the sauce to a gentle simmer.
Stir in the freshly chopped parsley and season with additional salt and black pepper to taste.
Add the drained pasta to the skillet along with approximately ½ cup of reserved pasta water. Toss continuously until the pasta is evenly coated in the creamy roasted onion sauce. Add more pasta water, a splash at a time, if needed to loosen the sauce.
Serve immediately with extra Parmesan cheese, fresh parsley, and an additional drizzle of chili crunch oil, if desired.
A Note About the Onions:
The key to this recipe is allowing the onions to develop a beautiful golden color and naturally sweet flavor. If they're still pale after an hour, remove the foil and continue roasting until they reach your desired color. Keep an eye on them so they don't burn!
