Air Fryer Mexican Corn 

This air fryer Mexican corn recipe is made with corn on the cobb, mayo, chipotle pepper, cotija cheese, and tajin. Cooks perfectly in just 10 minutes!

It’s sweet, savory, spicy, and hands down the best side dish or snack option.

INGREDIENTS

– corn – mayo – lime – chipotle pepper – cotija cheese – tajin seasoning – cilantro

Preheat your air fryer to 400 degrees F. and spray the air fryer basket with cooking spray. 

While the air fryer preheats, prepare the chipotle mayo sauce. In a small bowl, combine the mayo, lime juice, and minced chipotle pepper.

Place the corn in the air fryer basket and cook for 10 minutes, flipping halfway. 

Remove the corn from the air fryer and brush it with the chipotle mayo. Sprinkle some cotija cheese, cilantro, and tajin on top, and enjoy warm! 

Tips and Recipe Variations

– If you want the corn to be really charred, cook for a few extra minutes. – If you don’t have tajine seasoning on hand, use chipotle powder or chili powder instead.
