    Air Fryer Mexican Corn

    This air fryer Mexican corn recipe is made with corn on the cobb, mayo, chipotle pepper, cotija cheese, and tajin. Cooks perfectly in just 10 minutes! It’s sweet, savory, spicy, and hands down the best side dish or snack option.

    Mexican corn also known as elote or street corn is certainly at the top of every Mexican food lover’s list. I highly recommend serving this at your next Cinco de mayo party or on a regular busy weeknight, cause it’s super easy to make.

    Why You’ll Love This Recipe

    • Air frying corn is a lot easier than grilling or boiling it.
    • Corn and the rest of the ingredients for this recipe are very economical.
    • You can enjoy it corn on the cobb style or cut off the kernels and enjoy it corn off the cobb style.

    Ingredient Notes

    • Corn – Fresh or frozen corn will work, just make sure to thaw the frozen corn completely before cooking. If using fresh, make sure to remove the corn husks.
    • Mayo – Use your favorite brand.
    • Chipotle Peppers in Adobo Sauce – These are very spicy so I recommend using 1 and working your way up if you like it spicier.
    • Tajin – A spicy citrus seasoning blend. Completely optional.
    • Cotija Cheese – Can be found at most Hispanic grocery stores. If you can’t find cotija cheese, use parmesan cheese instead.
    • Limes – I highly recommend serving it with fresh lime on the side.

    Step-By-Step Instructions

    1. Preheat your air fryer to 400 degrees F. and spray the air fryer basket with cooking spray.
    2. While the air fryer preheats, prepare the chipotle mayo sauce. In a small bowl, combine the mayo, lime juice, and minced chipotle pepper.
    3. Place the corn in the air fryer basket and cook for 10 minutes, flipping halfway.
    4. Remove the corn from the air fryer and brush it with the chipotle mayo. Sprinkle some cotija cheese, cilantro, and tajin on top, and enjoy warm!

    Top Tips

    • If you want the corn to be really charred, cook for a few extra minutes.
    • Want a buttery taste? Brush the corn with a little bit of butter before brushing it with the chipotle mayo sauce.
    • If you don’t have tajine seasoning on hand, use chipotle powder or chili powder instead.
    • For best results, use fresh sweet corn.

    Can I Make This Without An Air Fryer?

    Yes, cook the corn how you normally do, and then brush it with the chipotle mayo sauce. This recipe is fail-proof and how you cook the corn doesn’t really matter.

    How To Serve

    Traditionally Mexican corn is served on wooden skewers but you can serve it without the skewers. You can also slice the kernels off and serve it in a cup. Mexican corn goes great with Spanish rice and air fryer carne asada.

    • 4 corn on the cobb
    • 3/4 cups mayo
    • 1/2 lime
    • 1 chipotle pepper in adobo sauce finely minced

    Instructions

    • Preheat your air fryer to 400 degrees F. and spray the air fryer basket with cooking spray.

    • Place the corn in the air fryer basket and cook for 10 minutes, flipping halfway.
