Mashed Sweet Potatoes With Goat Cheese and Bacon

These mashed sweet potatoes are loaded with goat cheese and bacon, and are perfect for the holidays or any family gathering!

Ingredients

  • 2.5 lbs sweet potatoes about 3 large sweet potatoes
  • 4 tablespoons unsalted butter softened
  • cup whole milk hot
  • 2 tablespoons honey or maple syrup or to taste
  • 1 cup goat cheese
  • 7-8 bacon strips cooked and chopped into bite-sized pieces
  • 3 tablespoons chives
  • salt and pepper to taste

Instructions

  • Peel and chop the sweet potatoes into 1" cubes. Place them in a pot and cover them with cold water. Cook for 20-25 minutes or until they're fork tender.
  • Drain the potatoes and then add the softened butter and mash until smooth. Use a potato masher or an electric mixer.
  • Add the milk and continue mixing until creamy.
  • Fold in 1/4 cup of goat cheese, honey, and season with salt and pepper.
  • Top it off with crispy bacon, goat cheese, and chives, and enjoy!

Notes

  • If you don't have a potato masher, use an electric mixer or a potato ricer to mash the sweet potatoes.
  • Make sure to boil the potatoes until they're completely tender.
  • I highly recommend topping the mashed sweet potatoes with lot's of crispy bacon, goat cheese, and chives for best results. If you don't have chives, scallions work too!
