- 2.5 lbs sweet potatoes about 3 large sweet potatoes
- 4 tablespoons unsalted butter softened
- ⅓ cup whole milk hot
- 2 tablespoons honey or maple syrup or to taste
- 1 cup goat cheese
- 7-8 bacon strips cooked and chopped into bite-sized pieces
- 3 tablespoons chives
- salt and pepper to taste
Peel and chop the sweet potatoes into 1" cubes. Place them in a pot and cover them with cold water. Cook for 20-25 minutes or until they're fork tender.
Drain the potatoes and then add the softened butter and mash until smooth. Use a potato masher or an electric mixer.
Add the milk and continue mixing until creamy.
Fold in 1/4 cup of goat cheese, honey, and season with salt and pepper.
Top it off with crispy bacon, goat cheese, and chives, and enjoy!
- If you don't have a potato masher, use an electric mixer or a potato ricer to mash the sweet potatoes.
- Make sure to boil the potatoes until they're completely tender.
- I highly recommend topping the mashed sweet potatoes with lot's of crispy bacon, goat cheese, and chives for best results. If you don't have chives, scallions work too!
