INGREDIENT NOTES
See the recipe card below for ingredient quantities and complete instructions.
- Sweet Potatoes – I like boiling them until fork-tender but feel free to bake them instead.
- Honey – Maple syrup or brown sugar can be used as well!
- Bacon – Avoid store-bought bacon bits. You want the real deal here! Here’s a great way to cook bacon.
- Goat Cheese – Cream cheese works too!
- Butter – Make sure to use softened unsalted butter for this recipe.
TOP TIPS
- If you don’t have a potato masher, use an electric mixer or a potato ricer to mash the sweet potatoes.
- Make sure to boil the potatoes until they’re completely tender.
- I highly recommend topping the mashed sweet potatoes with lots of crispy bacon, goat cheese, and chives for best results. If you don’t have chives, scallions work too!
- Want to make these extra delicious? Use candied bacon!
STORAGE AND REHEATING
If you have any leftovers, allow them to cool completely, then transfer them to an air-tight container and refrigerate for up to 3-4 days. Reheat in the microwave or stovetop until heated through.
