Pumpkin French Toast
Made with brioche bread and a creamy pumpkin custard, these are the best pumpkin french toast!

- 8 thick slices bread brioche or challah bread
- ½ cup whole milk
- ¼ cup canned pure pumpkin not pumpkin pie filling
- 2 eggs
- 1 tablespoon brown sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- butter, for frying
- maple syrup, for serving
In a large bowl, combine the eggs, milk, pumpkin, pumpkin pie spice, vanilla extract, and brown sugar.
Heat a large skillet over medium heat and add some butter.
Dip bread in egg mixture, coating both sides. Cook bread slices for 2-3 minutes on each side or until browned on both sides.
Serve with maple syrup, softened butter, and enjoy!
- Use day-old bread. To make the best french toast, you'll need thick slices of day-old bread. The bread should be about 3/4 - 1 inch thick.
- Work in batches! If using a skillet, don't cook the french toast all at the same time otherwise they won't get a nice golden color, and they will cook unevenly.
- Serve with maple syrup or else they will taste a little bland.
- The skillet should be nice and hot but don't cook the French toast over high heat otherwise you'll end up with a soggy center and crispy outside.
