INGREDIENT NOTES & SUBSTITUTIONS

- Pumpkin Puree – Not to be confused with pumpkin pie filling, you’ll need 1 cup of canned pure pumpkin.
- Bread – Any type of bread will work but brioche and challah bread are my favorite breads for French toast.
- Pumpkin Pie Spice – If you don’t have pumpkin pie spice, use ground cinnamon instead.
- Maple Syrup – Syrup, honey, or powdered sugar will work too. Just make sure to serve these with something sweet.
TOP TIPS
- Use day-old bread. To make the best french toast, you’ll need thick slices of day-old bread. The bread should be about 3/4 – 1 inch thick.
- Work in batches! If using a skillet, don’t cook the french toast all at the same time otherwise they won’t get a nice golden color, and they will cook unevenly.
- Serve with maple syrup or else they will taste a little bland.
- The skillet should be nice and hot but don’t cook the French toast over high heat otherwise you’ll end up with a soggy center and crispy outside.
STORAGE
Have any leftovers? Place them in an air-tight container and refrigerate for up to 2 days. For best results, reheat them in the oven or toaster.

Pumpkin French Toast
Ingredients
- 8 thick slices bread , brioche or challah bread
- ½ cup whole milk
- ¼ cup canned pure pumpkin , not pumpkin pie filling
- 2 eggs
- 1 tablespoon brown sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- butter, for frying
- maple syrup, for serving
Instructions
- In a large bowl, combine the eggs, milk, pumpkin, pumpkin pie spice, vanilla extract, and brown sugar.
- Heat a large skillet over medium heat and add some butter.
- Dip bread in egg mixture, coating both sides. Cook bread slices for 2-3 minutes on each side or until browned on both sides.
- Serve with maple syrup, softened butter, and enjoy!
