Ingredients

  • 2 cups cooked chicken shredded
  • 2 cups sour cream full-fat
  • 8 ounces cream cheese softened
  • 1 package dry ranch dressing
  • ¼ cup cooked bacon chopped into small pieces
  • 1 cup cheddar cheese shredded
  • ½ cup mozzarella cheese shredded
  • 3 scallions finely sliced

Instructions

  • Preheat oven to 400 degrees F.
  • Add the sour cream, cream cheese, and dry ranch dressing to a large bowl and mix until well combined.
  • Fold in the chicken, bacon, 1/2 cup of cheddar cheese, scallions, and mozzarella cheese.
  • Pour the mixture into an oven-safe baking dish and then top it off with the remaining cheddar and mozzarella cheese.
  • Bake for 20 minutes and broil for 1-2 minutes or until the cheese is golden brown. Garnish with extra bacon and scallions, if desired, and enjoy!

Notes

  • If you can't find Ranch seasoning, season the chicken dip with the spices of your choice.
  • Make sure the cream cheese is completely softened otherwise, you'll have trouble mixing it.
  • Use an electric mixer or two forks to shred the chicken.
  • If using a rotisserie chicken, discard the skin and bones and only use the white meat.
