This alphabet soup is filling, super tasty, and the kiddos are going to love it! You only need a few ingredients, and it takes less than 45 minutes to make.
Heat olive oil in a large pot over medium heat. Add the onions and cook for 2-3 minutes or until translucent.
Stir in the garlic and cook for 20 seconds.
Add the crushed tomatoes, spices, mixed vegetables, parmesan cheese rind, and chicken stock. Give it a good mix and allow it to come to a boil.
Once it comes to a boil, add the alphabet pasta and cook for 12-15 minutes. Season generously with salt and pepper and serve with parmesan cheese, if desired. Enjoy!
Notes
I used two bags of frozen mixed veggies which included carrots, peas, corn, and green beans. Use whatever you have on hand.
