Alphabet Soup

This alphabet soup is filling, super tasty, and the kiddos are going to love it! You only need a few ingredients, and it takes less than 45 minutes to make.

Ingredients

  • 1 cup alphabet pasta
  • 8 cups chicken stock
  • 1 small onion finely diced
  • 2 garlic cloves finely minced
  • 24 ounces frozen vegetables *check notes*
  • 28 ounces crushed tomatoes canned
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • 1 parmesan cheese rind optional
  • salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Add the onions and cook for 2-3 minutes or until translucent.
  • Stir in the garlic and cook for 20 seconds.
  • Add the crushed tomatoes, spices, mixed vegetables, parmesan cheese rind, and chicken stock. Give it a good mix and allow it to come to a boil.
  • Once it comes to a boil, add the alphabet pasta and cook for 12-15 minutes. Season generously with salt and pepper and serve with parmesan cheese, if desired. Enjoy!

Notes

I used two bags of frozen mixed veggies which included carrots, peas, corn, and green beans. Use whatever you have on hand.
