This alphabet soup is filling, super tasty, and the kiddos are going to love it! You only need a few ingredients, and it takes less than 45 minutes to make. Even though it’s a vegetarian soup, feel free to include chicken or beef!
I love serving it with homemade grilled cheese sandwiches!

Fall is here, and I bet you’re craving some soup! This recipe is one of my favorites and also one of the easiest to make. I’m sure you and your family will love it.

INGREDIENT NOTES

- Pasta – I used alphabet pasta, which you can find in the pasta section at most grocery stores. If it’s not available, you can easily find it online by searching for “alphabet pasta.”
- Tomatoes – Feel free to use canned diced tomatoes or crushed tomatoes. I used canned crushed tomatoes.
- Chicken Stock – Any type of stock will work. Vegetable, beef, or chicken!
- Vegetables – I used two bags of frozen mixed veggies which included carrots, peas, corn, and green beans. Use whatever you have on hand.
TOP TIPS
- Let the soup come to a boil before adding the pasta. Keep in mind that alphabet pasta takes a little longer to cook, about 12-15 minutes.
- Season the soup generously with lots of kosher salt and black pepper, right before serving.
- Throw in a parmesan cheese rind for extra flavor!
- Garnish with lot’s of fresh parmesan cheese right before serving, if desired.
STORAGE
Store any leftover soup in an airtight container and refrigerate for up to 3 days. Remember, the alphabet pasta will absorb a lot of the liquid, so add 2-3 cups of broth or water when reheating. You can also add more salt and pepper if needed. This soup freezes really well, too!

Alphabet Soup

- large pot
Ingredients
- 1 cup alphabet pasta
- 8 cups chicken stock
- 1 small onion , finely diced
- 2 garlic cloves, finely minced
- 24 ounces frozen vegetables, *check notes*
- 28 ounces crushed tomatoes , canned
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
- 1 parmesan cheese rind , optional
- salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the onions and cook for 2-3 minutes or until translucent.
- Stir in the garlic and cook for 20 seconds.
- Add the crushed tomatoes, spices, mixed vegetables, parmesan cheese rind, and chicken stock. Give it a good mix and allow it to come to a boil.
- Once it comes to a boil, add the alphabet pasta and cook for 12-15 minutes. Season generously with salt and pepper and serve with parmesan cheese, if desired. Enjoy!
