Fried Fish Sandwiches
Fried fish sandwiches make a great meal for busy weeknights. Perfectly seasoned fried cod served on brioche buns with all the fixings.

- 1 lb cod
- 1 tsp old bay seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/4 tsp cayenne pepper
- salt and pepper to taste
- 1/2 cup buttermilk
- 2 tsp hot sauce
- 1 egg
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1 tsp baking powder
Toppings
- Toasted brioche buns
- Tartar Sauce
- cheddar cheese
- lettuce
- tomatoes
In a small bowl, combine the old bay seasoning, garlic powder, onion powder, paprika, and cayenne pepper.
Season the cod with salt, pepper, and the spice blend on both sides.
In a bowl, combine the buttermilk, egg, and hot sauce. In a separate dish, combine the flour, cornmeal, and leftover spice blend.
Dip the fish in the buttermilk mixture and then coat it in the flour mixture. Make sure to coat the fish 2-3 times in the flour mixture.
Fry the fish for 2-3 minutes on each side and let it rest for 3-4 minutes on a wire rack before eating.

- If you're not a fan of tartar sauce use remoulade sauce or mayo instead.
- Serve with fresh lemon wedges.
