Ingredients

  • 1 lb Mahi Mahi about 3 or 4 fillets
  • 3 tablespoons unsalted butter melted
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 2 teaspoons granulated onion
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper
  • salt to taste
  • oil, for frying canola or vegetable oil, avoid olive oil
  • buns
  • tomatoes
  • corn salad

Instructions

  • Pat dry the mahi mahi fillets with a paper towel and then brush butter on both sides of each fillet.
  • In a small bowl, combine all of the spices. Mix well.
  • Season the fillets on both sides with the spice mixture. Season generously!
  • Heat oil in a skillet over medium heat.
  • Add the mahi mahi fillets to the skillet but don't overcrowd the skillet. I recommend cooking two-three fillets at a time. Cook for 4 minutes, then flip and cook for 3 minutes. I cooked them for a total of 7 minutes but keep in mind that cooking time will vary on the size of the fish. Cook over medium heat, not high heat!
  • Serve the mahi mahi fillets on warm buns with tomato slices and corn salad. Serve immediately and enjoy!

Notes

  • Don't overcook the fish, not even for a minute! I recommend cooking it over medium heat for about 4 minutes on one side and 3 minutes on the opposite side. Also, cooking time will vary with the size of your fish, so keep that in mind.
  • If the fish fillets are too big for your buns, simply slice them in half.
