Confetti Cake is my little brother’s favorite cake. I make it for him every year on February 8th. I prefer chocolate cake over vanilla but this one is so delicious that it actually makes me reconsider every time. I think most kids would enjoy this cake. It’s just a very fun looking cake. It screams kiddy in a good way. Imagine walking into an 8-year-old kids birthday party with this cake in one hand and a box of pizza in the other. You may get tackled.

Confetti Cake
Ingredients
Cake
- 12 ounces unsalted butter
- 2 cups sugar
- 4 egg whites
- 1/2 tbsp vanilla extract
- 3 cups flour
- 1/2 tsp baking soda
- 2 1/2 tsp baking powder
- 1 1/2 cups milk
- 3/4 cup rainbow sprinkles
- pinch of salt
Vanilla Buttercream
- 4 ounces unsalted butter
- 5 cups powdered sugar
- 1 tsp vanilla extract
- 1/4 cup milk plus 2 tbsp
Instructions
- Preheat oven to 350 degrees
- In a medium sized bowl, whisk the all purpose flour, baking soda, baking powder, salt, and set aside.
- In a large bowl beat the butter and sugar until nice and fluffy
- Add the vanilla extract and egg whites to the sugar mixture and mix until well incorporated
- Add the flour mixture to the butter and sugar mixture alternating with the milk
- Fold in the sprinkles
- Pour the batter into three greased 8 inch baking pans and bake for 25 minutes or until done
- To make the frosting, mix the unsalted butter for about 2 minutes
- Add the powdered sugar, milk, and vanilla extract, mix for about 3 minutes on high speed.

So I’m confused lol it looks like you only did 3 sticks of butter in the cake batter but the directions say 24oz of butter. Am I missing something? And also could I do cake balls with this recipe?

If I make cupcakes with this recipe should the cooking time be the same?
