    I have a love/hate relationship with stuffed shells. I love cheese but ricotta cheese is probably 7th on my cheese list. With that being said, I like to use a lot of other potent ingredients. I like to use a very well seasoned sauce (vodka sauce). And I love throwing in lots of parmesan, mozzarella, basil, spinach, and granulated garlic.

    I absolutely love this recipe. Super flavorful and easy. I hope you guys enjoy these vodka stuffed shells as much as my 4-year-old cousin and I do.

    Vodka Stuffed Shells

    Pasta shells stuffed with spinach, ricotta, parmesan, and mozzarella cheese. Cooked in a delicious homemade vodka tomato creamy sauce. Perfect comfort meal.

    Ingredients

    • 1 lb Cooked Pasta Shells
    • 1 small onion
    • 2 garlic cloves
    • 1/4 tsp red pepper flakes
    • 1/2 cup Vodka
    • 1 28 oz can crushed tomatoes
    • 3 tbsp heavy cream
    • 1/2 tsp oregano
    • sugar to taste
    • salt and pepper to taste
    • Ricotta Filling:
    • 2 lb ricotta cheese
    • 1 cup fresh spinach
    • 1 tsp fresh basil
    • 1/2 cup mozzarella cheese
    • 1/4 cup parmesan cheese
    • 1 egg
    • 1/2 tsp garlic powder
    • salt and pepper to taste

    Instructions

    • Preheat oven to 450 degrees F.
    • Cook the onions in a large skillet with oil over medium-high heat for 3-4 minutes or until translucent.
    • Stir in the garlic and red crushed pepper, cook for an additional 20 seconds.
    • Add the vodka and let it reduce by half.
    • Add the crushed tomatoes and season with salt, pepper, oregano, and sugar.
    • Reduce the heat to low, cover, and cook for 20 minutes.
    • Stir in the heavy cream and check for seasoning.
    • In a large bowl, combine the ricotta cheese, spinach, mozzarella cheese, parmesan cheese, granulated garlic, salt, pepper, and egg.
    • Add 1 cup of sauce to the bottom of a baking dish.
    • Stuff cooked shells with ricotta mixture and place them in the baking dish.
    • Pour the remaining sauce over the stuffed shells.
    • Cover with mozzarella and parmesan cheese and bake for 15 minutes.
    • Enjoy!
