    Sweet and savory yellow cupcakes with a cream cheese frosting, syrup drizzle, and bacon bits

    If you love French Toast, you’re going to love these! These cupcakes have bacon bits inside and they’re topped off with a creamy cream cheese frosting. Remember the saying “Bacon goes with anything”. It’s true. These cupcakes have proved it.

    Moist and delicious cupcakes topped off with crispy bacon and maple syrup.

    Ingredients

    • 1 cup all purpose flour
    • 1 tsp baking powder
    • 1 tsp cinnamon
    • pinch of salt
    • 1/2 cup buttermilk
    • 2 ounces unsalted butter
    • 3/4 cup sugar
    • 1 tsp vanilla extract
    • 2 tbsp chopped bacon
    • 2 eggs
    • 1/4 tsp nutmeg

    Cream Cheese Frosting:

    • 8 ounces cream cheese
    • 2 ounces unsalted butter
    • 2 1/2 cups powdered sugar

    Instructions

    • Preheat oven to 350 degrees F.
    • In a large bowl, sift the all-purpose flour and baking powder, set aside.
    • In a separate bowl, combine the butter and sugar.
    • Add the eggs, nutmeg, cinnamon, vanilla extract, salt, and buttermilk.
    • Add the flour mixture and mix until well combined.
    • Fold in the crispy chopped bacon.
    • Spoon batter into prepared muffin cups, filling them about 3/4 full. Bake for 18 minutes or until done.
    • To make the cream cheese frosting, mix the cream cheese and butter for about 3 minutes. 
Add the powdered sugar and vanilla extract, and mix for about 3 minutes on high speed
Using a piping bag frost your cooled cupcakes.
    • Top them off with crispy bacon and maple syrup if desired and enjoy!
