WHY ARE THESE CALLED MILLION-DOLLAR DEVILED EGGS?

“Million dollar deviled eggs” is a way of saying that these deviled eggs are really fancy and special.

People use this term because they think these eggs are so delicious they’re as valuable as a million dollars, even though they don’t actually cost that much, haha!

INGREDIENT NOTES & SUBSTITUTIONS

See the recipe card below for ingredient quantities and complete instructions.

  • Bacon – Any type of bacon will work, just make sure it’s nice and crispy.
  • Pickle Juice – If you don’t have pickle juice, use vinegar instead.
  • Sugar – Optional.
  • Mayo – I like to use Hellmann’s mayo for this recipe but use your favorite mayo brand!

TOP TIPS

  • Let the deviled eggs chill in the fridge for at least an hour before serving for best results.
  • You can use a spoon to fill the egg whites or put the yolk mixture into a plastic bag and pipe it into the whites for a fancier look. I personally prefer using a spoon cause it’s so much easier!
  • The second the eggs are done cooking, place them in a bowl with ice-cold water to stop the cooking process.
  • Don’t overcook the eggs; otherwise, they will get a green ring around the yolk.
  • Taste the yolk mixture and adjust it to your liking before filling the egg whites.
  • Want to make these keto-friendly? Omit the sugar.

MAKE AHEAD & STORAGE

You can make the deviled egg filling a day ahead of time. Prepare the yolk mixture, and store it in an airtight container in the fridge.

Keep the egg whites and the yolk filling separate until you’re ready to serve. Store the egg whites in an airtight container and the filling separately.

Place any leftover deviled eggs in an air-tight container and refrigerate for up to 2 days.
