    Fried Plantains (Platanos Maduros)

    These sweet fried plantains or platanos maduros are very ripe bananas fried in oil until crispy and caramelized. A quick snack or side dish that can be made in under 10 minutes. Serve this with congri and pernil for a delicious authentic Cuban meal.

    Sweet fried plantains are a staple in Caribbean cuisine. Savory foods like rice and beans just go so well together with fried plantain slices. The difference between bananas and plantains is simple, bananas can be consumed raw while plantains require cooking. Plantains are starchy and not very sweet until they’re fried. Once fried, they become incredibly sweet and delicious.

    • Only requires 2 ingredients, oil, and plantains.
    • Takes minutes to put together.
    • Cooked plantains are a rich source of fiber.

    Ingredient Notes

    • Oil – Canola, vegetable, or peanut oil are recommended. Don’t use olive oil.
    • Plantains – Make sure you use very ripe yellow plantains. Green plantains resemble potatoes in flavor meanwhile yellow plantains are much softer and sweeter.

    How To Make Fried Plantains (Platanos Maduros)

    1. Begin by peeling the plantains and cutting off both ends. Cut a slit down each plantain and then remove the peel. Slice the plantain into 1/4 inch thick slices.
    2. Heat some oil in a skillet. Once the oil reaches 325 degrees F, fry the plantains for 2-3 minutes on each side or until golden brown. Keep an eye on them, they tend to burn very quickly. Season with salt, if desired, and enjoy.

    Top Tip

    When removing the plantain slices from the oil, make sure to remove them one by one, or else they will stick together.

    Storage

    Place any leftover plantains in an air tight container and refrigerate for up to 1 week. Freeze for up to 3 weeks.

    • oil, for frying
    • salt to taste optional
