Believe it or not, I despised Oreo cookies for most of my life. I always thought they were too chocolaty and just made me super thirsty. I don’t know when I became a fan but I did. Boy did I. Cupcakes, on the other hand, was always a love of mine. Give me a cupcake and a cup of coffee and I am one happy girl. So yeah, I threw Oreo cookies into the cupcake batter and frosting and they were divine. The cupcakes are very chocolaty but the frosting balances everything out.
Oreo Cupcakes
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup melted milk chocolate chips
- 1/2 cup unsweetened cocoa powder
- 1 cup all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- pinch of salt
- 2 eggs
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/4 cup sour cream
- 3/4 cup Oreo cookie crumbs
Oreo Cream Cheese Frosting
- 1/2 cup unsalted butter
- 8 ounces cream cheese
- 3 cups powdered sugar
- 1 tbsp milk
- 1 tsp vanilla extract
- 1/4 cup Oreo cookie crumbs
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, sift the all-purpose flour, baking powder, baking soda, salt, and set aside.
- Using an electric mixer, beat the unsalted butter, brown sugar, and granulated sugar until smooth.
- Add the eggs, sour cream, vanilla extract, and melted chocolate.
- Add the flour mixture alternating with the buttermilk.
- Fold in the Oreo cookie crumbs.
- Using an ice-cream scoop, scoop the batter evenly into your muffin tin and bake for 15-18 minutes.
- To make the cream cheese Oreo frosting, mix the cream cheese and butter for about 3 minutes
- Add the powdered sugar, milk, Oreo Crumbs, and vanilla extract and mix for about 3 minutes on high speed
- Using a piping bag frost your cooled cupcakes, top them off with an Oreo cookie if desired and enjoy!
