WHAT IS A COBBLER?

A cobbler is a type of baked dessert that typically consists of a fruit filling topped with a batter or pastry crust. The fruit filling is often made with ingredients like berries, peaches, apples, or cherries, combined with sugar and sometimes spices.

  • Blackberries – If you’re not a fan of blackberries, feel free to use any type of berries you have on hand. You can use cherries, blueberries, or even peaches!
  • Flour – All-purpose flour is recommended for this recipe.
  • Butter – Make sure to use good quality unsalted melted butter.
  • Milk – Use whole milk for the best results.

TOP TIPS

  • I highly recommend using fresh blackberries, but if using frozen berries, make sure not to thaw them otherwise, they will become mushy.
  • Bake for 36-38 minutes or until a toothpick inserted in the center comes out clean. However, make sure not to overbake it, not even for 1 minute, otherwise, the cobbler will turn out dry.
  • I can’t stress this enough, serve the cobbler warm!
  • Blackberries are heavy, so don’t worry if they sink to the bottom.

STORAGE

Place any leftovers in an air-tight container and refrigerate for up to 3 days. Reheat in the microwave for a few seconds until heated through.

Equipment

  • 9×9 baking dish

Ingredients 

  • 2 cups blackberries
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar, divided
  • 2 teaspoons baking powder
  • ½ teaspoon Kosher salt
  • 4 tablespoons unsalted butter , melted
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • vanilla ice cream, for serving

Instructions 

  • Preheat your oven to 375 degrees F. and grease a 9×9 baking dish.
  • Rinse the blackberries and discard any stems. Add about 1 tbsp of sugar to the blackberries and mix well. 
  • In a large bowl, mix the melted unsalted butter, vanilla extract, whole milk, and sugar until well combined. Add the flour, baking powder, and salt and mix until well combined.
  • Pour the cake batter into the greased baking dish and then top it off with the blackberries. Don't mix. Bake for 36-38 minutes. Let it cool for 3-5 minutes and enjoy it with vanilla ice cream!
