    These fruity pebbles cookies are soft, chewy, and bake in 12 minutes. Made from scratch, no chilling the dough, and cookies keep their shape!

    The inspiration for these delicious cookies came from these sugar cookies and this fruity pebble cheesecake. I just love fruity pebbles and soft-baked cookies. The fruity pebbles add crunch, flavor, and sweetness. I just know you’re going to love these!

    Ingredient Notes

    Butter – Unsalted and softened at room temperature.

    Egg – Use a room-temperature egg for even baking.

    Fruity Pebbles – This cereal can be found at most grocery stores.

    How To Make The Best Fruity Pebble Cookies

    1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
    2. Start by creaming the softened butter and sugar for about 2-3 minutes.
    3. Add the egg and vanilla extract and mix until well combined.
    4. Add the flour, baking soda, baking powder, cornstarch, and salt. Mix until it forms a ball of dough. Add the fruity pebbles and mix until well combined.
    5. Place about 1 cup of fruity pebbles in a dish. Divide the cookie dough into balls, then roll in fruity pebbles to coat evenly.
    6. Place the cookie dough balls on the baking sheet. Bake for 12 minutes and enjoy.

    Top Tips

    • Use a cookie scoop to measure the dough for even baking.
    • Don’t overbake the cookies or overmix the dough.
    • Eat the cookies while warm!
    • Use softened butter and room-temperature eggs.

    Why Are My Cookies Dry?

    If your cookies are dry and crumbly, you probably baked them for too long or used expired ingredients. Always use fresh ingredients when baking. I also recommend placing any leftover cookies in an air-tight container.

    What Can I Serve These With?

    Hot tea, coffee, or milk goes great with freshly baked cookies.

    Do I Have To Add Cornstarch?

    I highly recommend adding it because it gives it an ultra-soft consistency.

    • 2 1/2 cups all-purpose flour
    • 1/2 tsp baking soda
    • 1/2 tsp baking powder
    • 1 tsp cornstarch
    • 1/2 tsp salt
    • 1 cup unsalted butter (2 sticks) softened
    • 1 egg room temperature
    • 1 1/4 cups sugar
    • 1/4 cup fruity pebbles
    • 1 tbsp vanilla extract
