    Coconut Cookies with Cream Cheese Frosting

    These coconut cookies with cream cheese frosting are soft, sweet, and insanely delicious. Coconut and cream cheese lovers will fall in love with these!

    6 Coconut Cookies With Cream Cheese Frosting

    If you love chewy cookies with frosting, then you’re going to love this recipe! These are super easy to make, and the recipe makes about 15 cookies. For more of my favorite coconut recipes, check out this coconut tres leches, coconut flan, and fried coconut shrimp.

    INGREDIENT NOTES

    SEE RECIPE CARD BELOW FOR INGREDIENT QUANTITIES AND INSTRUCTIONS.

    • Coconut Flakes – I used sweetened coconut flakes for this recipe.
    • Butter – You’ll need 1 cup of softened unsalted butter for both the cookie recipe and cream cheese frosting.
    • Cream Cheese – I like using Philadelphia cream cheese but use your favorite brand! Just make sure it’s softened at room temperature.
    • Sugar – You’ll need granulated sugar, light brown sugar, and powdered sugar.
    • Extract – You’ll need vanilla extract and coconut extract.
    butter, flour, egg, coconut flakes, sugar, extracts, cream cheese, baking soda, and salt.

    TOP TIPS

    • The cookies are pretty sweet on their own so I recommend applying a minimal quantity of cream cheese frosting on each cookie. Otherwise they might be a little too sweet for some folks.
    • Feel free to add a bit of lemon juice or a pinch of salt to the cream cheese frosting if it’s too sweet for your liking but do keep in mind that cream cheese frosting is supposed to be sweet.
    • Allow the cookies to sit for 10-15 minutes when they come out of the oven otherwise they will fall apart.

    HOW LONG DO I BAKE THESE COOKIES FOR?

    I baked these cookies for 12 minutes but it is crucial to let them rest for a couple of extra minutes after removing them from the oven. This is because they tend to be extremely soft right out of the oven.

    STORAGE

    Place any leftovers in an air-tight container and store them at room temperature for 2-3 days.

    These coconut cookies with cream cheese frosting are soft, sweet, and insanely delicious. Coconut and cream cheese lovers will fall in love with these!

    Ingredients

    • 1 ¼ cup all-purpose flour
    • ½ teaspoon kosher salt
    • ½ teaspoon baking soda
    • ½ cup unsalted butter softened
    • ¼ teaspoon coconut extract
    • ½ cup granulated sugar
    • ½ cup light brown sugar
    • 1 teaspoon vanilla extract
    • 1 egg room temperature
    • 1 cup sweetened coconut flakes
    • 1 batch cream cheese frosting

    Instructions

    • Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
    • Mix 1/2 cup of butter, granulated sugar, and brown sugar until well combined. This should take a couple of minutes.
    • Add the egg, coconut extract, coconut flakes, and vanilla extract. Mix for 1 minute.
    • Add the flour, salt, and baking soda and mix until the mixture turns into cookie dough. Make sure to scrape the bottom and sides of the bowl.
    • Using a cookie scoop, drop the cookie dough onto the baking sheet and bake the cookies for 11-12 minutes. Once they come out of the oven, allow them to cool completely before frosting.
    • Frost with cream cheese frosting and toasted coconut flakes, if desired and enjoy!
