    These coconut cookies are chewy, perfectly sweet, and super easy to make! Made with sweetened coconut flakes, coconut extract, and a few other ingredients.

    These cookies are bursting with coconut flavor and have a rich buttery taste. I just know you’re going to love them! Plus, no need to chill the dough beforehand! Just mix the ingredients, drop cookie balls onto a baking sheet, and bake. For more of my favorite coconut recipes, check out this coconut tres leches and coconut flan.

    INGREDIENT NOTES

    • Butter – You’ll need unsalted butter softened at room temperature.
    • Egg – Make sure it’s at room temperature. I like to take it out of the fridge an hour before I start baking.
    • Coconut Flakes – You’ll want to use sweetened coconut flakes, make sure they’re fresh and soft.
    • Coconut Extract – Adds so much flavor! Don’t omit it.

    TOP TIPS

    • Make sure the brown sugar is soft; otherwise, it will be difficult to mix in. Ensure that all of your ingredients are fresh for the best cookies!
    • Don’t overbake the cookies! You’ll need to bake them for 11-12 minutes at 350 degrees F.
    • Line your baking sheet with parchment paper so the cookies don’t stick.
    • If you don’t have a cookie scoop, use a tablespoon to scoop the dough onto the baking sheet.

    HOW MANY COOKIES DOES THIS RECIPE MAKE?

    This recipe makes about 15 cookies but feel free to double the recipe if you want to make a large batch.

    STORAGE

    Store any leftover cookies in an airtight container at room temperature for 2-3 days.

    Ingredients

    • 1 ¼ cup all-purpose flour
    • ½ teaspoon Kosher salt
    • ½ teaspoon baking soda
    • ½ cup unsalted butter softened
    • ¼ teaspoon coconut extract
    • ½ cup granulated sugar
    • ½ cup brown sugar
    • 1 teaspoon vanilla extract
    • 1 egg room temperature
    • 1 cup sweetened coconut flakes

    Instructions

    • Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
    • Combine 1/2 cup of butter, granulated sugar, and brown sugar until well-mixed. This should take a few minutes.
    • Add the egg, coconut extract, coconut flakes, and vanilla extract. Mix for 1 minute.
    • Incorporate the flour, salt, and baking soda into the mixture until it forms cookie dough. Be sure to scrape the bottom and sides of the bowl.
    • Using a cookie scoop, place the cookie dough onto the baking sheet and bake for 11-12 minutes.
    • Enjoy warm!
