    Creamy Cucumber Salad

    This crisp and creamy cucumber salad is made with minimal ingredients in under 10 minutes! It’s tangy, sweet, and the ultimate side dish for your summer cookouts.

    Serve this delicious salad with Southern fried shrimp or BBQ chicken skewers for a complete meal!

    I just love whipping up quick and easy salads when I host. This is one of my all-time favorites! It’s fail-proof, super economical, light, and refreshing, and I always get compliments. For more salad varieties check out this tomato avocado salad and this deli-style macaroni salad.

    Ingredient Notes

    • Cucumbers – I like to use English or garden cucumbers for this recipe but you can use any type of cucumber. I don’t peel them but you can if you’d like. Just make sure to slice the cucumbers really thin. I highly recommend using a mandoline.
    • Mayo – I used Hellman’s mayo but feel free to use your favorite brand.
    • Sour Cream – Full fat.
    • Dill – Use fresh for best results.
    • Sugar – It helps to balance the acidity of the vinegar.
    • Vinegar – White distilled vinegar works best for this recipe. If you don’t have vinegar on hand, use lemon juice.
    • Onions – I used a small white onion but feel free to use any type of onion.

    How To Make

    1. Add the mayo, sour cream, sugar, and vinegar to a large bowl, and mix until well combined.
    2. Fold in the cucumbers, onions, and fresh dill. Season generously with salt and pepper and enjoy!

    Top Tips For The Perfect Creamy Cucumber Salad

    • Season the salad very generously with salt and pepper.
    • Allow the cucumber salad to sit for at least 5 minutes before serving to let the flavors combine.
    • The thinner the cucumber slices are, the easier it will be to stir the salad.
    • Not a fan of seeds? Scrape them out and discard them.
    • Want to make it a tad bit healthier? Use Greek yogurt instead of mayo and sour cream.
    • Salt the cucumber slices to draw out excess moisture for about 5 minutes before mixing in the dressing if you wish but keep in mind that it will soften the cucumbers.
    • Enjoy at room temperature.
    • Taste the salad, if you want it sweeter, add an extra pinch of sugar. If you want it creamier, add an extra spoonful of sour cream. Adjust the salad to your liking!

    Can I Make It Ahead Of Time?

    You can slice the cucumbers ahead of time but I recommend adding the dressing right before serving otherwise the salad will release too much moisture and become watery.

    • 2 cucumbers about 1 & 1/4 lb *very thinly sliced*
    • 1/4 cup mayo
    • 1/4 cup sour cream
    • 2 tablespoon vinegar
    • 1/2 teaspoon sugar
    • 1/2 tablespoon fresh dill
    • 1/2 onion thinly sliced
    • salt and pepper to taste
