This ham and gruyere cheese crustless quiche requires minimal ingredients and is super easy to make. It’s delicious, loaded with flavor, and perfect for busy weekends!
This recipe is perfect for breakfast, brunch, or even dinner! I love serving this quiche with mimosas and roasted baby potatoes for special occasions like Easter. INGREDIENT NOTES
- Eggs – You’ll need 6 large eggs for this recipe.
- Ham – Diced ham or chunks of ham work. Feel free to use turkey instead.
- Cheese – I really like gruyere cheese for this recipe but you can use any type of cheese you prefer. Cheddar and swiss are great choices.
- Half and Half – If you don’t have half and half on hand, feel free to use heavy cream.
- Oil – You’ll need melted butter, oil, or nonstick spray to grease your baking dish.
- Salt – I recommend Kosher salt.
TOP TIPS
- Make sure to grease your baking dish generously so the quiche doesn’t stick. Grease the sides of your dish as well.
- To ensure a soft and creamy texture, be careful not to overbake the quiche.
- Feel free to include spinach, peppers, mushrooms, etc.
HOW LONG DO I BAKE IT FOR?
I baked it for exactly 45 minutes at 350 degrees F but keep in mind that every oven is different. Bake your quiche until the center is just about set. I would start checking it at the 40-minute mark.
STORAGE
You can enjoy this quiche warm or at room temperature. However, if you have any leftovers, allow them to cool completely, transfer to an air-tight container and refrigerate for up to 2 days. Simply reheat in the oven or microwave until heated through.

Ham and Gruyere Cheese Crustless Quiche
Ingredients
- 6 large eggs
- 1 ½ cups Gruyere cheese , shredded
- ½ cup diced ham
- 1 ½ cups half and half
- ½ teaspoon Kosher salt , or to taste
- nonstick spray
Instructions
- Preheat your oven to 350 degrees F. and grease a 9-inch baking dish. Make sure to grease the sides as well.
- In a large bowl, whisk the eggs, half and half, and salt until smooth. Fold in 1 cup of Gruyere cheese.
- Spread the ham evenly into the greased baking dish. Pour the egg mixture slowly into the baking dish.
- Add the remaining cheese on top of the egg mixture and bake for 42-45 minutes or until the center is just about set.
- Allow the quiche to sit for 10-15 minutes before slicing into it and enjoy warm or at room temperature. Garnish with fresh chives, if desired!
