Corn – You can use any type of corn for this recipe. Fresh, canned, or frozen corn works perfectly.
Jalapeno – I discarded the membrane and seeds but if you like it spicy, add some seeds to the corn mixture.
Cheese – I used a combination of cheddar and mozzarella cheese but feel free to use any type of cheese you have on hand.

Corn Fritters
Ingredients
- 3 cups corn kernels fresh, frozen, or canned.
- 1/2 cup cheddar cheese
- 1/2 cup mozzarella cheese
- 1/2 jalapeno pepper deseeded and finely diced
- 1/4 cup scallions
- 1 cup all-purpose flour
- 1/2 cup whole milk
- 1 tsp salt or to taste
- 1 tsp baking powder
- 1 tbsp sugar or to taste
- 2 eggs
- oil, for frying
Instructions
- In a large bowl, combine the flour, corn, baking powder, and salt. Mix well.
- Add the eggs, whole milk, and sugar. Mix well. Fold in the cheese, scallions, and jalapeno peppers.
- Heat about 2 tbsp of oil in a small skillet. Add about 1/4 cup of the corn mixture to the skillet and flatten it a bit. Cook for 2 minutes on each side.
- Enjoy with sour cream, maple syrup, or on its own.
