    These corn fritters are sweet corn kernels combined with cheese, eggs, and flour, then fried until golden brown. Serve with sour cream or maple syrup for the ultimate appetizer.

    Why I Love These Easy Corn Fritters

    • It’s super easy to make. It took about 30 minutes from start to finish.
    • They’re cheesy, crispy, sweet, and absolutely delicious.
    • Economical and perfect for a large crowd.

    Ingredient Notes

    Corn – You can use any type of corn for this recipe. Fresh, canned, or frozen corn works perfectly.

    Jalapeno – I discarded the membrane and seeds but if you like it spicy, add some seeds to the corn mixture.

    Cheese – I used a combination of cheddar and mozzarella cheese but feel free to use any type of cheese you have on hand.

    Top Tips

    • Cook the corn fritters over medium-low heat for 2 minutes on each side.
    • If you want to make them sweeter, add more sugar!

    What Is The Difference Between Corn Fritters And Hush Puppies?

    Hushpuppies are shaped like golf-sized balls while corn fritters look more like pancakes. Also, hushpuppies consist of a corn meal-based dough while corn fritters consist of actual corn kernels.

    What Can I Serve These With?

    I like to serve these as an appetizer or a snack. However, you may certainly serve it with garlic butter steak tips and creamy mashed potatoes for a restaurant-quality meal.

    Storage

    Place any leftovers in an air-tight container and refrigerate for up to 3 days.

    Ingredients

    • 3 cups corn kernels fresh, frozen, or canned.
    • 1/2 cup cheddar cheese
    • 1/2 cup mozzarella cheese
    • 1/2 jalapeno pepper deseeded and finely diced
    • 1/4 cup scallions
    • 1 cup all-purpose flour
    • 1/2 cup whole milk
    • 1 tsp salt or to taste
    • 1 tsp baking powder
    • 1 tbsp sugar or to taste
    • 2 eggs
    • oil, for frying

    Instructions

    • In a large bowl, combine the flour, corn, baking powder, and salt. Mix well.
    • Add the eggs, whole milk, and sugar. Mix well. Fold in the cheese, scallions, and jalapeno peppers.
    • Heat about 2 tbsp of oil in a small skillet. Add about 1/4 cup of the corn mixture to the skillet and flatten it a bit. Cook for 2 minutes on each side.
    • Enjoy with sour cream, maple syrup, or on its own.
