    Air Fryer Stuffed Peppers

    These air fryer stuffed peppers are filled with savory beef and rice filling, then finished with cheese and air fried to perfection! It’s a quick and easy weeknight meal that the entire family will love!

    Air fryer recipes are my absolute favorite because the food cooks so quickly! Although, you certainly don’t need an air fryer to make these delicious stuffed peppers!

    Why You’ll Love These Air Fryer Stuffed Peppers

    • The peppers don’t turn out soggy! They are perfectly juicy and tender-crisp!
    • The beef and rice filling is super flavorful.
    • Perfect for meal prep.
    • The recipe is super versatile and can be adjusted to your liking!
    • Peppers are good for you and are low-carb.

    Ingredient Notes

    Bell Peppers – I prefer red bell peppers because they are the sweetest but feel free to use orange, green, or any color. Just make sure to discard the membrane and seeds.

    Ground Beef – I used 90/10 ground beef but you may use ground turkey or ground chicken instead.

    Marinara Sauce – Homemade or store-bought works.

    Rice – Although I used Jasmine rice, feel free to use brown rice, quinoa, couscous, or the rice of your choice.

    How To Make

    1. Add 1 cup of water, 1/2 teaspoon of salt, and 1 teaspoon of olive oil to a saucepan and bring to a boil. Once it comes to a boil, add 1/2 cup of rice, cover, reduce the heat to medium-low and cook for 15 minutes.
    2. While the rice cooks, brown the beef in a large skillet. Add the onions and cook for 2-3 minutes. Stir in the garlic, cayenne pepper, garlic powder, Italian seasoning, salt, and pepper, and cook for 1-2 minutes.
    3. Add the cooked rice and 1 cup of marinara sauce to the ground beef and mix until well combined. Check for seasoning.
    4. Cut the peppers in half lengthwise and discard the seeds and membranes. Brush the peppers with olive oil and season with salt and pepper.
    5. Place the peppers in the air fryer basket and cook for 3 minutes at 400 degrees F.
    6. Fill each pepper with the beef and rice mixture and top with the remaining sauce. Cook for 10 minutes at 350 degrees F.
    7. Once the 10 minutes are up, top with cheese and cook for an additional 2 minutes.
    8. Serve immediately and enjoy!

    Top Tips For The Perfect Stuffed Peppers

    • Make sure your bell peppers are all the same size so they cook evenly.
    • Taste the ground beef and rice mixture before stuffing the peppers!
    • Feel free to top the stuffed peppers with sour cream or the toppings of your choice.
    • Don’t overcrowd your air fryer basket.

    Can I Bake These In The Oven Instead?

    Yes, of course. Bake the stuffed peppers in an oven-safe dish covered for 20 minutes at 400 degrees F. Uncover and bake for 2-3 minutes or until the cheese melts completely.

    Have leftovers? Allow them to cool completely then transfer them to an air-tight container and refrigerate for up to 3 days.

    Ingredients

    • 3 bell peppers
    • 1 lb ground beef
    • 1 ½ cups marinara sauce or store-bought
    • 1 teaspoon garlic powder
    • 1 teaspoon Italian seasoning
    • ¼ teaspoon cayenne pepper optional
    • ½ onion finely diced
    • 2 garlic cloves finely minced
    • 1 tablespoon olive oil
    • 1 cup cheddar Jack cheese
    • salt and pepper to taste

    Rice
