Ingredient Notes
Bell Peppers – I prefer red bell peppers because they are the sweetest but feel free to use orange, green, or any color. Just make sure to discard the membrane and seeds.
Ground Beef – I used 90/10 ground beef but you may use ground turkey or ground chicken instead.
Marinara Sauce – Homemade or store-bought works.
Rice – Although I used Jasmine rice, feel free to use brown rice, quinoa, couscous, or the rice of your choice.
How To Make
- Add 1 cup of water, 1/2 teaspoon of salt, and 1 teaspoon of olive oil to a saucepan and bring to a boil. Once it comes to a boil, add 1/2 cup of rice, cover, reduce the heat to medium-low and cook for 15 minutes.
- While the rice cooks, brown the beef in a large skillet. Add the onions and cook for 2-3 minutes. Stir in the garlic, cayenne pepper, garlic powder, Italian seasoning, salt, and pepper, and cook for 1-2 minutes.
- Add the cooked rice and 1 cup of marinara sauce to the ground beef and mix until well combined. Check for seasoning.
- Cut the peppers in half lengthwise and discard the seeds and membranes. Brush the peppers with olive oil and season with salt and pepper.
- Place the peppers in the air fryer basket and cook for 3 minutes at 400 degrees F.
- Fill each pepper with the beef and rice mixture and top with the remaining sauce. Cook for 10 minutes at 350 degrees F.
- Once the 10 minutes are up, top with cheese and cook for an additional 2 minutes.
- Serve immediately and enjoy!
Top Tips For The Perfect Stuffed Peppers
- Make sure your bell peppers are all the same size so they cook evenly.
- Taste the ground beef and rice mixture before stuffing the peppers!
- Feel free to top the stuffed peppers with sour cream or the toppings of your choice.
- Don’t overcrowd your air fryer basket.
Can I Bake These In The Oven Instead?
Yes, of course. Bake the stuffed peppers in an oven-safe dish covered for 20 minutes at 400 degrees F. Uncover and bake for 2-3 minutes or until the cheese melts completely.
Leftovers…
Have leftovers? Allow them to cool completely then transfer them to an air-tight container and refrigerate for up to 3 days.
