Ingredient Notes
Green Beans – Use fresh green beans. Avoid canned or frozen green beans for this recipe. Although I used regular green beans, French green beans (Haricots Verts) work best for this recipe. French green beans are slightly longer and thinner than regular green beans.
Shallots – I used shallots but use any type of onions if you wish. Just make sure they’re nice and caramelized.
Lemon – It adds flavor and a bit of tang but feel free to omit it.
Top Tips For The Ultimate Green Beans Almondine
- Include some crispy bacon, pancetta, or parmesan cheese on top for some extra flavor and saltiness.
- Season the water generously with kosher salt and blanch the green beans for 2-3 minutes or until they are bright green and crisp-tender.
- If you don’t want to slice the garlic and shallots, feel free to finely mince it instead.
- Want to make this vegan? Omit the butter and use oil instead.
Can I Make This Ahead Of Time?
I highly recommend making this the same day you plan on serving it. It takes about 20 minutes to put together and tastes best when served immediately. I don’t recommend making this ahead of time. You can, however, slice the shallots and garlic ahead of time.

Green Beans Almondine
Ingredients
- 1 lb green beans , washed and trimmed
- 1 shallot , finely sliced
- 3 garlic cloves , finely sliced
- 2 tbsp butter
- 1/4 cup almonds
- 1/8 tsp lemon zest
- 2 tsp lemon juice
- 1/2 tsp red crushed pepper , optional
- salt and pepper to taste

Instructions
- Bring a large pot of water to a boil and salt generously. Add the green beans and cook for 2-3 minutes or until crisp-tender.
- Add some oil to a skillet along with the sliced shallots and sliced garlic. Cook over medium heat for 10-15 minutes or until some color develops. Season with salt, red crushed pepper, black pepper and remove it from the skillet.
- To the same skillet add the butter and almonds. Let the almonds cook over medium heat for 3-5 minutes or until nice and toasty. Reserve about 2 tbsp of the almonds. Add the blanched green beans, lemon juice, and lemon zest. Season with salt and pepper.
- Place the green beans in a serving dish and top it off with the shallot garlic mixture and reserved almonds. Enjoy!
